- 3 large chicken breasts (boneless and skinless, sliced lengthwise into thin cutlets)
- ½ teaspoon salt
- ¼ teaspoon ground black pepper
- 6 tablespoons all-purpose flour
- 2 tablespoons olive oil
- 2 tablespoons unsalted butter
- 3 cloves garlic (minced)
- 1 cup chicken stock
- 1 cup heavy cream
- ½ cup grated parmesan cheese
- 1 teaspoon chili flakes
- ¼ teaspoon oregano
- ¼ teaspoon thyme
- ⅓ cup sun-dried tomatoes (chopped)
- 1 tablespoon fresh basil leaves
Instructions
- Start by seasoning the chicken with salt and pepper. Then dredge the chicken in flour and shake off any excess.
- In a large skillet, heat the olive oil and melt the butter over medium heat.
- Brown the chicken in the skillet for about 4-5 minutes on each side until it looks golden.
- Transfer the chicken onto a plate, cover it, and set it aside.
- In the same skillet, sauté the minced garlic for about a minute until it releases its fragrant aroma.
- Pour in the chicken stock and deglaze the pan, scraping up any tasty bits stuck to the bottom.
- Add the heavy cream and parmesan cheese to the skillet, letting the sauce simmer for a couple of minutes until it begins to thicken.
- Sprinkle in the chili flakes, oregano, and thyme, then season with salt and pepper to taste.
- Toss in the sun-dried tomatoes.
- Return the chicken to the skillet, allowing it to bask in the rich sauce for a few more minutes.
- Garnish with chopped fresh basil leaves and serve warm.
