- 1 tablespoon olive oil
- 1 cup fresh spinach
- 4 cherry tomatoes, sliced
- 6 cucumber slices
- 6 Kalamata olives, pitted and sliced
- 2 tablespoons feta cheese, crumbled
- 2 pita breads or slices of sandwich bread
- Salt and pepper to taste
Instructions
- Start by slicing the cherry tomatoes, cucumbers, and olives into small pieces for easy layering. Rinse the fresh spinach in cold water, then pat it dry with a paper towel.
- Heat the olive oil in a skillet over medium heat. Once the oil is hot, crack the eggs into the skillet and cook them to your liking.
- While the eggs are cooking, toast the pita or your chosen bread until it’s warm and slightly crispy.
- If you want an extra flavor boost, spread some hummus or pesto on the toasted bread (optional).
- Now, layer the spinach first, followed by the sliced tomatoes, cucumbers, olives, and the cooked egg.
- Sprinkle crumbled feta cheese over the top and season with salt and pepper to taste.
- Carefully close your sandwich or fold the pita, pressing gently to keep everything inside. Serve immediately or wrap it up to-go.
