- 1/4 cup breadcrumbs
- 1/4 cup grated parmesan cheese
- 1 egg
- 2 cloves garlic, minced
- 1 tablespoon fresh parsley, chopped
- 1 teaspoon oregano
- Salt and pepper to taste
- 1 cup cooked rice
- 1 lemon (zested and juiced)
- 1 cucumber, diced
- 1 cup cherry tomatoes, halved
- 1/2 red onion, thinly sliced
- 1 cup tzatziki sauce
- Olive oil
Instructions
- Preheat your oven to 400°F (200°C).
- Combine the ground chicken, breadcrumbs, grated parmesan, egg, minced garlic, chopped parsley, oregano, salt, and pepper in a mixing bowl. Mix until everything is well incorporated.
- Form the chicken mixture into meatballs and place them evenly on a baking sheet.
- Drizzle olive oil over the meatballs and bake for 20-25 minutes or until cooked through.
- Prepare the lemony rice by mixing the cooked rice with lemon juice and zest.
- Assemble your bowls with a serving of rice, meatballs, diced cucumber, halved cherry tomatoes, and sliced red onion.
- Top with tzatziki sauce and serve warm.
