Ingredients

  • 1.5 pounds chicken breast, cut into bite-sized pieces
  • 3 cups fresh spinach
  • 1.5 cups cherry tomatoes, halved
  • 1 large red bell pepper, diced
  • 1 medium yellow squash, sliced
  • 4 garlic cloves, minced
  • 3 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 0.5 teaspoon red pepper flakes
  • Zest of 1 lemon
  • Salt and black pepper to taste

Instructions

  1. Start by patting the chicken breast pieces dry with paper towels and seasoning with salt, black pepper, and half of the dried oregano.
  2. Heat 2 tablespoons of olive oil in a large skillet over medium-high heat, then add the seasoned chicken and sear for about 5-6 minutes until golden-brown.
  3. Transfer the cooked chicken to a plate to rest.
  4. Add the remaining olive oil to the skillet, toss in minced garlic, and sauté for 30 seconds.
  5. Stir in the diced bell pepper and sliced yellow squash, cooking for 4-5 minutes until slightly softened.
  6. Return the chicken to the skillet, add halved cherry tomatoes, fresh spinach, remaining oregano, red pepper flakes, and adjust seasonings; toss everything together.
  7. Cook for another 2-3 minutes until the spinach wilts down.
  8. Remove from heat and finish with fresh lemon zest before serving.

Notes
