- 1.5 pounds chicken breast, cut into bite-sized pieces
- 3 cups fresh spinach
- 1.5 cups cherry tomatoes, halved
- 1 large red bell pepper, diced
- 1 medium yellow squash, sliced
- 4 garlic cloves, minced
- 3 tablespoons olive oil
- 1 teaspoon dried oregano
- 0.5 teaspoon red pepper flakes
- Zest of 1 lemon
- Salt and black pepper to taste
Instructions
- Start by patting the chicken breast pieces dry with paper towels and seasoning with salt, black pepper, and half of the dried oregano.
- Heat 2 tablespoons of olive oil in a large skillet over medium-high heat, then add the seasoned chicken and sear for about 5-6 minutes until golden-brown.
- Transfer the cooked chicken to a plate to rest.
- Add the remaining olive oil to the skillet, toss in minced garlic, and sauté for 30 seconds.
- Stir in the diced bell pepper and sliced yellow squash, cooking for 4-5 minutes until slightly softened.
- Return the chicken to the skillet, add halved cherry tomatoes, fresh spinach, remaining oregano, red pepper flakes, and adjust seasonings; toss everything together.
- Cook for another 2-3 minutes until the spinach wilts down.
- Remove from heat and finish with fresh lemon zest before serving.
Notes
