- 1 lb ground beef
- 1 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 egg
- 3 cloves garlic, minced
- 1 tsp dried oregano
- 1 tsp salt
- 1/2 tsp black pepper
- 2 cups baby potatoes, halved
- 2 tbsp olive oil
- 1 cup cherry tomatoes, halved
- 1 cucumber, chopped
- 1/4 red onion, thinly sliced
- 1/2 cup feta cheese, crumbled
- 2 cups mixed greens
- Lemon juice, to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Mix ground beef, breadcrumbs, Parmesan, egg, garlic, oregano, salt, and pepper in a bowl. Form mixture into meatballs and place on a baking sheet.
- Toss halved potatoes with olive oil, salt, and pepper, then spread them on the same baking sheet.
- Bake everything for 25-30 minutes, or until meatballs are cooked through and potatoes are tender.
- Combine cherry tomatoes, cucumber, red onion, and feta cheese in a salad bowl. Toss with mixed greens and a drizzle of lemon juice.
- Serve meatballs and potatoes alongside the Greek salad.
Notes
For best results, do not overmix the meatball mixture and use lean ground beef.
