Ingredients

  • 4 flour tortillas
  • 1 cup fresh spinach (chopped)
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup crumbled feta cheese
  • 1 small tomato (diced)
  • 1/4 cup red onion (thinly sliced)
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil (for frying)

Instructions

  1. Start by combining the mozzarella, feta, spinach, diced tomatoes, red onion, and black pepper in a mixing bowl. Stir until everything is well mixed.
  2. Lay one tortilla flat on a clean surface. Place one-fourth of the yummy filling mixture onto half of the tortilla.
  3. Fold the tortilla over to cover the filling, creating a half-moon shape.
  4. Heat a large skillet or griddle over medium heat. Add the olive oil and let it heat up.
  5. Place the filled tortilla in the pan and cook for about 3-4 minutes on each side. Use a spatula to press it gently, ensuring the cheese melts and the tortilla gets that lovely golden brown.
  6. Remove the quesadilla from the heat and let it cool for a minute. Then, slice it into wedges and serve.

Notes

Don’t overfill the tortillas to prevent difficulty in cooking. Keep the heat at medium for the best results.
