Ingredients
- Tortillas
- Fresh spinach
- Feta cheese
- Mozzarella cheese
- Red onion

- Tzatziki (for serving)

Instructions
- Heat olive oil in a skillet over medium heat.
- Add chopped red onion and sauté until softened.
- Stir in the spinach and cook until wilted. Season with salt and pepper.
- Layer the sautéed spinach, feta, and mozzarella on a tortilla.
- Top with another tortilla and cook on both sides until golden and the cheese is melted.
- Repeat the process with the remaining tortillas and filling.
- Cut into wedges and serve with tzatziki and a fresh salad.
Notes
For a burst of flavor, sprinkle fresh herbs on top before serving and add a squeeze of lemon.
