Ingredients

  • 12 lasagna noodles
  • 2 cups ricotta cheese
  • 3 cups spinach, chopped
  • 1 zucchini, diced
  • 1 bell pepper, diced
  • 1 onion, chopped
  • 2 cups marinara sauce
  • 2 cups mozzarella cheese, shredded
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cook the lasagna noodles according to package instructions; drain and set aside.
  3. Heat olive oil in a skillet over medium heat. Add onions, zucchini, and bell pepper; sauté until tender.
  4. Add spinach, garlic powder, salt, and pepper. Cook until spinach wilts.
  5. Spread a layer of marinara sauce at the bottom of a baking dish.
  6. Layer 4 noodles, half of the ricotta mixture, half of the vegetable mixture, and a third of the mozzarella.
