Ingredients

- 1 lb steak (sirloin or ribeye)
- 1 cup quinoa
- 2 cups vegetable broth
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/4 red onion, thinly sliced
- 1/2 cup kalamata olives, pitted and sliced
- 1/4 cup feta cheese, crumbled
- 2 tbsp olive oil
- Juice of 1 lemon
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Cook quinoa in vegetable broth according to package instructions (about 15 minutes).
- Season the steak with salt and pepper, then grill or pan-sear over medium-high heat for 4-5 minutes per side.
- Combine cherry tomatoes, cucumber, red onion, olives, feta, olive oil, lemon juice, salt, and pepper in a large bowl.
- Assemble the bowls starting with quinoa as a base, then add sliced steak and the Mediterranean salad mix on top.
- Garnish with fresh parsley and serve immediately.
Notes
Consider pairing with warm pita or tzatziki for extra flavor. Leftovers can be stored in an airtight container for 3-4 days.
