Ingredients

  • 1 lb steak (sirloin or ribeye)
  • 1 cup quinoa
  • 2 cups vegetable broth
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/4 red onion, thinly sliced
  • 1/2 cup kalamata olives, pitted and sliced
  • 1/4 cup feta cheese, crumbled
  • 2 tbsp olive oil
  • Juice of 1 lemon
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cook quinoa in vegetable broth according to package instructions (about 15 minutes).
  2. Season the steak with salt and pepper, then grill or pan-sear over medium-high heat for 4-5 minutes per side.
  3. Combine cherry tomatoes, cucumber, red onion, olives, feta, olive oil, lemon juice, salt, and pepper in a large bowl.
  4. Assemble the bowls starting with quinoa as a base, then add sliced steak and the Mediterranean salad mix on top.
  5. Garnish with fresh parsley and serve immediately.

Notes

Consider pairing with warm pita or tzatziki for extra flavor. Leftovers can be stored in an airtight container for 3-4 days.
