- 1 cup all-purpose flour
- 2 tablespoons sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup buttermilk
- 1 large egg
- 2 tablespoons melted butter
- Cooking spray or additional butter for the pan
Instructions
- In a mixing bowl, combine the flour, sugar, baking powder, baking soda, and salt. Give it a good stir to mix everything together.
- In another bowl, whisk together the buttermilk, egg, and melted butter until well combined. Make sure the butter isn’t too hot; otherwise, it can cook the egg!
- Pour the wet ingredients into the dry ingredients and stir gently until just combined. It’s perfectly fine if there are a few lumps; this means your pancakes will be extra fluffy.
- Heat a non-stick skillet or griddle over medium heat and lightly grease it with cooking spray or a dab of butter.
- Pour 1/4 cup of the batter onto the skillet for each pancake. Let it cook until bubbles form on the surface, which takes about 2-3 minutes. Then, flip and cook until golden brown on the other side, about 1-2 minutes more.
- Repeat with the remaining batter, adding more butter or spray to the skillet as needed between pancakes.
- Serve warm with your favorite syrup or toppings. Enjoy every bite!
Notes
Don’t overmix the batter; a few lumps are fine. Keep pancakes warm in the oven set to low while cooking the rest.
