Description
A one-pan dish featuring juicy chicken thighs or breasts cooked with rice in a delicious honey BBQ sauce, complemented by mixed vegetables.

- 1 lb boneless, skinless chicken thighs or breasts
- 1 cup long-grain rice
- 2 cups chicken broth
- ½ cup BBQ sauce
- ¼ cup honey
- 1 cup mixed vegetables (frozen or fresh)
- 1 tsp garlic powder
- 1 tsp onion powder
- ½ tsp smoked paprika
- Salt and pepper to taste
Instructions
- Season your chicken with salt, pepper, garlic powder, onion powder, and smoked paprika. Heat a large skillet over medium heat and sear the chicken for about 5 minutes on each side until browned.
- Whisk together the BBQ sauce and honey in a small bowl. Once the chicken is browned, pour the sauce mixture over the top.
- Add the rice and chicken broth to the skillet. Stir everything together to combine and ensure the rice is submerged in the liquid.
- Bring the mixture to a simmer, cover, and reduce the heat to low. Let it cook for about 20 minutes, or until the rice is tender and has absorbed the liquid.
- Sprinkle the mixed vegetables on top in the last 5 minutes of cooking. Cover again to allow them to steam and cook through.
- Let it sit for 5 minutes off the heat. Then, fluff the rice with a fork and serve warm.
Notes
Serve with a fresh green salad or crusty bread. Garnish with chopped green onions or cilantro for added flavor.
