Description

A one-pan dish featuring juicy chicken thighs or breasts cooked with rice in a delicious honey BBQ sauce, complemented by mixed vegetables.


Ingredients

  • 1 lb boneless, skinless chicken thighs or breasts
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • ½ cup BBQ sauce
  • ¼ cup honey
  • 1 cup mixed vegetables (frozen or fresh)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp smoked paprika
  • Salt and pepper to taste

Instructions

  1. Season your chicken with salt, pepper, garlic powder, onion powder, and smoked paprika. Heat a large skillet over medium heat and sear the chicken for about 5 minutes on each side until browned.
  2. Whisk together the BBQ sauce and honey in a small bowl. Once the chicken is browned, pour the sauce mixture over the top.
  3. Add the rice and chicken broth to the skillet. Stir everything together to combine and ensure the rice is submerged in the liquid.
  4. Bring the mixture to a simmer, cover, and reduce the heat to low. Let it cook for about 20 minutes, or until the rice is tender and has absorbed the liquid.
  5. Sprinkle the mixed vegetables on top in the last 5 minutes of cooking. Cover again to allow them to steam and cook through.
  6. Let it sit for 5 minutes off the heat. Then, fluff the rice with a fork and serve warm.

Notes

Serve with a fresh green salad or crusty bread. Garnish with chopped green onions or cilantro for added flavor.
