Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup BBQ sauce
  • 1 cup rice
  • 2 cups chicken broth
  • 1 cup frozen mixed vegetables
  • 1 tablespoon honey
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Season the chicken breasts with salt and pepper, ensuring both sides are covered.
  3. Add the seasoned chicken breasts to the skillet and cook for about 5-7 minutes on each side until golden brown and cooked through.
  4. Remove the chicken from the skillet and set aside on a plate.
  5. Add the rice and chicken broth to the skillet, stirring to combine.
  6. Bring the mixture to a boil, then reduce the heat and let it simmer for 15 minutes.
  7. Toss in the frozen vegetables and honey, stirring well to incorporate everything.
  8. Return the chicken to the skillet, pour BBQ sauce over it, and let it simmer together for an additional 5 minutes.
