One-Pan Juicy Chicken with Balsamic Sauce

Description

A quick and easy one-pan chicken dish with a sweet tangy balsamic sauce and creamy mozzarella cheese.


Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 1/2 cup balsamic vinegar
  • 2 tablespoons olive oil
  • 2 cups cherry tomatoes, halved
  • 1 cup mozzarella cheese, shredded
  • Fresh basil leaves, for garnish
  • Salt and pepper, to taste

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Season the chicken breasts with salt and pepper. Then, add them to the skillet. Cook for about 6-7 minutes on each side until they turn golden brown and cook through.
  3. Once cooked, remove the chicken from the skillet and set it aside.
  4. In the same skillet, add the balsamic vinegar and cherry tomatoes. Cook for about 2-3 minutes until the tomatoes start to soften.
  5. Return the chicken to the skillet and top each breast with shredded mozzarella cheese.
  6. Cover the skillet and let it cook for another 2-3 minutes until the cheese melts.
  7. Before serving, garnish with fresh basil leaves.

Notes

Serve over rice or mashed potatoes, or with a side salad. For added crunch, sprinkle with toasted pine nuts or sliced almonds.
