Description
A quick and easy one-pan chicken dish with a sweet tangy balsamic sauce and creamy mozzarella cheese.

- 4 boneless, skinless chicken breasts
- 1/2 cup balsamic vinegar
- 2 tablespoons olive oil
- 2 cups cherry tomatoes, halved
- 1 cup mozzarella cheese, shredded
- Fresh basil leaves, for garnish
- Salt and pepper, to taste
Instructions
- Heat olive oil in a large skillet over medium heat.
- Season the chicken breasts with salt and pepper. Then, add them to the skillet. Cook for about 6-7 minutes on each side until they turn golden brown and cook through.
- Once cooked, remove the chicken from the skillet and set it aside.
- In the same skillet, add the balsamic vinegar and cherry tomatoes. Cook for about 2-3 minutes until the tomatoes start to soften.
- Return the chicken to the skillet and top each breast with shredded mozzarella cheese.
- Cover the skillet and let it cook for another 2-3 minutes until the cheese melts.
- Before serving, garnish with fresh basil leaves.
Notes
Serve over rice or mashed potatoes, or with a side salad. For added crunch, sprinkle with toasted pine nuts or sliced almonds.
