Ingredients

  • 1 cup orzo pasta
  • 2 cups chicken broth
  • 1 cup cooked chicken, shredded
  • 1 cup tomatoes, diced
  • 1 cup chickpeas, drained and rinsed
  • 1 cup mushrooms, sliced
  • 1 tablespoon olive oil
  • 1 teaspoon garlic, minced
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat the olive oil in a pot over medium heat. Add the minced garlic and sliced mushrooms, cooking until the mushrooms become tender—about 3 to 5 minutes.
  2. Add the orzo pasta, chicken broth, diced tomatoes, chickpeas, and shredded chicken to the pot. Stir everything together well.
  3. Season with salt and pepper to taste, then bring the mixture to a boil.
  4. Reduce the heat, cover the pot, and let it simmer for about 10 to 12 minutes until the orzo is tender.
  5. Stir occasionally and add more broth if needed.
  6. Remove the pot from heat, garnish with fresh parsley, and serve warm.
