- 2 cups chicken broth
- 1 cup cooked chicken, shredded
- 1 cup tomatoes, diced
- 1 cup chickpeas, drained and rinsed
- 1 cup mushrooms, sliced
- 1 tablespoon olive oil
- 1 teaspoon garlic, minced
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat the olive oil in a pot over medium heat. Add the minced garlic and sliced mushrooms, cooking until the mushrooms become tender—about 3 to 5 minutes.
- Add the orzo pasta, chicken broth, diced tomatoes, chickpeas, and shredded chicken to the pot. Stir everything together well.
- Season with salt and pepper to taste, then bring the mixture to a boil.
- Reduce the heat, cover the pot, and let it simmer for about 10 to 12 minutes until the orzo is tender.
- Stir occasionally and add more broth if needed.
- Remove the pot from heat, garnish with fresh parsley, and serve warm.
