  • 2 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 bell peppers (red and yellow), sliced
  • 3 cloves garlic, minced
  • 1 cup chicken broth
  • 1/4 cup soy sauce
  • 2 tablespoons honey
  • 1 tablespoon cornstarch
  • Salt and pepper to taste
  • Optional: green onions or sesame seeds for garnish

Instructions

  1. Start by heating your skillet over medium-high heat. Drizzle in that olive oil, allowing it to warm up.
  2. Season both sides of each chicken breast with salt and pepper. Place the chicken in the skillet and cook for about 5-7 minutes on each side until browned and cooked through. Once done, remove the chicken and set it aside.
  3. In the same skillet, add the chopped onion and sliced bell peppers. Sauté these colorful veggies for about 4-5 minutes until they soften and become fragrant.
  4. Toss in the minced garlic and cook for another minute, stirring frequently to avoid burning the garlic.
  5. Pour in the chicken broth and add the soy sauce and honey. Stir everything together, letting it simmer and combine for about 2-3 minutes.
  6. In a small bowl, mix the cornstarch with a bit of water to create a slurry. Slowly add this to the skillet while stirring to thicken the sauce. Let it simmer for another 2 minutes until sauce thickens.
  7. Finally, return the chicken to the skillet, coating it with the delightful sauce. Let everything cook together for an additional 2 minutes.
  8. Serve hot, garnished with optional green onions or sesame seeds for an extra touch of flavor.
