- 2 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 2 bell peppers (red and yellow), sliced
- 3 cloves garlic, minced
- 1 cup chicken broth
- 1/4 cup soy sauce
- 2 tablespoons honey
- 1 tablespoon cornstarch
- Salt and pepper to taste
- Optional: green onions or sesame seeds for garnish
Instructions
- Start by heating your skillet over medium-high heat. Drizzle in that olive oil, allowing it to warm up.
- Season both sides of each chicken breast with salt and pepper. Place the chicken in the skillet and cook for about 5-7 minutes on each side until browned and cooked through. Once done, remove the chicken and set it aside.
- In the same skillet, add the chopped onion and sliced bell peppers. Sauté these colorful veggies for about 4-5 minutes until they soften and become fragrant.
- Toss in the minced garlic and cook for another minute, stirring frequently to avoid burning the garlic.
- Pour in the chicken broth and add the soy sauce and honey. Stir everything together, letting it simmer and combine for about 2-3 minutes.
- In a small bowl, mix the cornstarch with a bit of water to create a slurry. Slowly add this to the skillet while stirring to thicken the sauce. Let it simmer for another 2 minutes until sauce thickens.
- Finally, return the chicken to the skillet, coating it with the delightful sauce. Let everything cook together for an additional 2 minutes.
- Serve hot, garnished with optional green onions or sesame seeds for an extra touch of flavor.
