Ingredients

  • 1 cup quinoa
  • 2 cups vegetable broth
  • 1 can black beans, drained and rinsed
  • 1 cup corn (fresh, frozen, or canned)
  • 1 red bell pepper, diced
  • 1 avocado, diced
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste
  • Fresh cilantro, for garnish
  • Lime wedges, for serving

Instructions

  1. Start by rinsing the quinoa under cold water.
  2. In a medium saucepan, combine the rinsed quinoa and vegetable broth. Bring it to a boil over medium-high heat.
  3. Once boiling, reduce the heat to low, cover the pot, and let it simmer for 15 minutes until the quinoa absorbs the broth.
  4. While the quinoa cooks, heat a large skillet over medium heat. Add the black beans, corn, diced bell pepper, cumin, chili powder, salt, and pepper. Stir everything together and cook for about 5-7 minutes until the bell pepper is tender.
  5. When the quinoa is done, fluff it with a fork and combine it with the black bean mixture in the skillet. Stir well to combine all the flavors.
  6. Serve the food bowl in individual bowls, topping each with diced avocado, fresh cilantro, and a squeeze of lime juice.

Notes

To enhance flavors, customize toppings and add lime juice for brightness. Store leftovers in the fridge for up to 3 days.
