- 1 cup quinoa
- 2 cups vegetable broth
- 1 can black beans, drained and rinsed
- 1 cup corn (fresh, frozen, or canned)
- 1 red bell pepper, diced
- 1 avocado, diced
- 1 tsp cumin
- 1 tsp chili powder
- Salt and pepper to taste
- Fresh cilantro, for garnish
- Lime wedges, for serving
Instructions
- Start by rinsing the quinoa under cold water.
- In a medium saucepan, combine the rinsed quinoa and vegetable broth. Bring it to a boil over medium-high heat.
- Once boiling, reduce the heat to low, cover the pot, and let it simmer for 15 minutes until the quinoa absorbs the broth.
- While the quinoa cooks, heat a large skillet over medium heat. Add the black beans, corn, diced bell pepper, cumin, chili powder, salt, and pepper. Stir everything together and cook for about 5-7 minutes until the bell pepper is tender.
- When the quinoa is done, fluff it with a fork and combine it with the black bean mixture in the skillet. Stir well to combine all the flavors.
- Serve the food bowl in individual bowls, topping each with diced avocado, fresh cilantro, and a squeeze of lime juice.
Notes
To enhance flavors, customize toppings and add lime juice for brightness. Store leftovers in the fridge for up to 3 days.
