- 1 lb ground beef (lean preferred)
- 1 lb red potatoes, diced
- 1–2 cups shredded cheddar or Colby Jack cheese
- 1 cup chopped lettuce or mixed greens
- 1 small onion, diced
- 1–2 tablespoons olive oil
- Salt and black pepper, to taste
- ½ cup mayonnaise
- ¼ cup ketchup
- 1 tablespoon yellow or Dijon mustard
- ½ teaspoon Cajun seasoning (adjust to taste)
- Pickles
- Extra lettuce
- Fresh parsley (for garnish)
Instructions
- Preheat your air fryer to 400°F. Toss the diced potatoes with olive oil, salt, and pepper. Air fry for 16–18 minutes, shaking the basket halfway through, until the potatoes are golden and crispy.
- Heat a skillet over medium-low heat with a little olive oil. Add the diced onions and cook them for about 10–15 minutes, stirring occasionally, until they’re soft and golden. Once they are done, remove them from the skillet and set aside.
- Add the ground beef to the same skillet, breaking it up with a spatula. Press it into the pan to create crispy edges. Cook for about 5–7 minutes until browned. Season with salt and pepper, and drain any excess fat if needed.
- Whisk together mayonnaise, ketchup, mustard, and Cajun seasoning in a small bowl until the mixture is smooth and well combined.
- Assemble your bowls by adding a layer of crispy potatoes, topping them with beef, caramelized onions, and a generous portion of shredded cheese. Drizzle your special sauce over everything and finish with lettuce and any additional toppings like pickles or fresh parsley.
