Description

A delightful dish of al dente penne pasta mixed with fresh vegetables in a creamy sauce, perfect for family gatherings or quick dinners.


Ingredients

  • 8 oz penne pasta
  • 2 cups mixed fresh vegetables (bell peppers, zucchini, cherry tomatoes, carrots)
  • 1 cup heavy cream
  • 2 tbsp olive oil
  • 1/4 cup fresh herbs (basil, parsley)
  • 2 cloves garlic, minced
  • 1/2 cup grated parmesan cheese
  • Salt to taste
  • Pepper to taste

Instructions

  1. Cook the penne pasta according to the package instructions. Drain and set aside.
  2. Heat olive oil over medium heat in a large skillet. Add minced garlic and sauté until fragrant.
  3. Add the mixed vegetables to the skillet and cook until tender, about 5-7 minutes.
  4. Pour in the heavy cream and stir in the chopped herbs. Let it simmer for a few minutes.
  5. Add the cooked pasta to the skillet and mix everything thoroughly.
  6. Season with salt and pepper to taste; give it a final stir.
  7. Serve hot, topped with grated parmesan cheese.

Notes

For best results, use fresh seasonal vegetables. Adjust seasoning to your personal preference.
