- 1 cup heavy cream
- 2 tbsp olive oil
- 1/4 cup fresh herbs (basil, parsley)
- 2 cloves garlic, minced
- 1/2 cup grated parmesan cheese
- Salt to taste
- Pepper to taste
Instructions
- Cook the penne pasta according to the package instructions. Drain and set aside.
- Heat olive oil over medium heat in a large skillet. Add minced garlic and sauté until fragrant.
- Add the mixed vegetables to the skillet and cook until tender, about 5-7 minutes.
- Pour in the heavy cream and stir in the chopped herbs. Let it simmer for a few minutes.
- Add the cooked pasta to the skillet and mix everything thoroughly.
- Season with salt and pepper to taste; give it a final stir.
- Serve hot, topped with grated parmesan cheese.
