Description

A luscious homemade strawberry cheesecake with a creamy filling and a buttery graham cracker crust, perfect for family gatherings.


Ingredients

  • 1 ½ cups graham cracker crumbs
  • ½ cup granulated sugar
  • ½ cup unsalted butter, melted
  • 2 (8 oz) packages cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 2 cups fresh strawberries, sliced
  • 3 tablespoons strawberry jam

Instructions

  1. Preheat your oven to 325°F (160°C). In a mixing bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Stir until all the crumbs are well moistened. Press this mixture firmly into the bottom of a springform pan to create your crust. Bake it in the preheated oven for about 10 minutes until it turns a lovely golden brown. Remove and let it cool slightly.
  2. Beat the softened cream cheese with a hand mixer until it’s smooth and creamy. Add the powdered sugar and vanilla extract, mixing until everything is well blended. Next, add the eggs one at a time, mixing just until incorporated after each addition. Don’t overbeat, or your cheesecake may crack.
  3. Pour the cream cheese mixture into the cooled crust, smoothing the top with a spatula. Bake the cheesecake in the oven for 55-65 minutes or until the center is slightly jiggly but set. Turn off the oven and crack the door open, letting the cheesecake cool inside for about an hour.
  4. Refrigerate the cheesecake for at least 4 hours or overnight. Just before serving, combine the sliced strawberries with the strawberry jam and spoon this mixture on top of the cheesecake.
  5. Carefully remove the sides of the springform pan. Slice, serve, and enjoy!

Notes

For a professional touch, garnish each slice with a dollop of whipped cream and an additional fresh strawberry on top.
