A luscious homemade strawberry cheesecake with a creamy filling and a buttery graham cracker crust, perfect for family gatherings.

- 1 ½ cups graham cracker crumbs
- ½ cup granulated sugar
- ½ cup unsalted butter, melted
- 2 (8 oz) packages cream cheese, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 3 large eggs
- 2 cups fresh strawberries, sliced
- 3 tablespoons strawberry jam
Instructions
- Preheat your oven to 325°F (160°C). In a mixing bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Stir until all the crumbs are well moistened. Press this mixture firmly into the bottom of a springform pan to create your crust. Bake it in the preheated oven for about 10 minutes until it turns a lovely golden brown. Remove and let it cool slightly.
- Beat the softened cream cheese with a hand mixer until it’s smooth and creamy. Add the powdered sugar and vanilla extract, mixing until everything is well blended. Next, add the eggs one at a time, mixing just until incorporated after each addition. Don’t overbeat, or your cheesecake may crack.
- Pour the cream cheese mixture into the cooled crust, smoothing the top with a spatula. Bake the cheesecake in the oven for 55-65 minutes or until the center is slightly jiggly but set. Turn off the oven and crack the door open, letting the cheesecake cool inside for about an hour.
- Refrigerate the cheesecake for at least 4 hours or overnight. Just before serving, combine the sliced strawberries with the strawberry jam and spoon this mixture on top of the cheesecake.
- Carefully remove the sides of the springform pan. Slice, serve, and enjoy!
Notes
For a professional touch, garnish each slice with a dollop of whipped cream and an additional fresh strawberry on top.
