Ingredients

  • 2 cups of mixed greens (spinach, arugula, romaine)
  • 1 cup of cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 bell pepper, diced
  • 1 avocado, diced
  • ½ cup of feta cheese, crumbled
  • ¼ cup of olives (Kalamata or green)
  • 3 tablespoons of olive oil
  • 1 tablespoon of balsamic vinegar
  • Salt and pepper to taste

Instructions

  1. Start by washing the mixed greens thoroughly.
  2. In a large mixing bowl, add the washed greens as your base.
  3. Next, halve the cherry tomatoes and add them to the bowl.
  4. Dice the cucumber and bell pepper into bite-sized pieces.
  5. Slice your avocado carefully, then scoop it out and add the cubes to the mix.
  6. Toss in the crumbled feta cheese and olives.
  7. In a separate small bowl, whisk together the olive oil and balsamic vinegar.
  8. Drizzle the dressing over the salad and gently toss everything together.
  9. Serve immediately or refrigerate briefly to meld flavors.
