Ingredients

- 1 cup of cherry tomatoes, halved
- 1 cucumber, diced
- 1 bell pepper, diced
- 1 avocado, diced
- ½ cup of feta cheese, crumbled
- ¼ cup of olives (Kalamata or green)
- 3 tablespoons of olive oil
- 1 tablespoon of balsamic vinegar
- Salt and pepper to taste
Instructions
- Start by washing the mixed greens thoroughly.
- In a large mixing bowl, add the washed greens as your base.
- Next, halve the cherry tomatoes and add them to the bowl.
- Dice the cucumber and bell pepper into bite-sized pieces.
- Slice your avocado carefully, then scoop it out and add the cubes to the mix.
- Toss in the crumbled feta cheese and olives.
- In a separate small bowl, whisk together the olive oil and balsamic vinegar.
- Drizzle the dressing over the salad and gently toss everything together.
- Serve immediately or refrigerate briefly to meld flavors.
