- 2 tablespoons Olive Oil (Or avocado oil)
- 1 teaspoon Smoked Paprika (Or regular paprika)
- Salt to taste

- 1 pound Ground Beef (Or turkey, chicken, or black beans)
- 2 tablespoons Taco Seasoning (Homemade or store-bought)
- 1 cup Pico de Gallo (Diced tomatoes, onion, cilantro)
- 1 cup Guacamole (Mashed avocado with lime juice)
- 1/2 cup Sour Cream (Or Greek yogurt)
- Optional Toppings (Crumbled cheese, lime wedges, tortilla chips)
Instructions
- Preheat your oven to 400°F (200°C).
- Toss the cubed sweet potatoes with olive oil, smoked paprika, salt, and pepper in a large bowl.
- Spread the sweet potatoes on a baking sheet in a single layer and roast for 20-25 minutes, stirring halfway through.
- Heat a skillet over medium heat and add the ground beef, cooking it until browned, about 5 to 7 minutes.
- Sprinkle the taco seasoning over the browned meat and let it simmer for another 5 minutes.
- Assemble your bowls starting with a base of roasted sweet potatoes, followed by the seasoned meat, pico de gallo, guacamole, and a dollop of sour cream.
- Add optional toppings like crumbled cheese, lime wedges, or tortilla chips before serving warm.
