A quick and easy Thai Peanut Chicken recipe featuring tender chicken in a rich, creamy peanut sauce.

- 4 boneless, skinless chicken breasts (about 1.5 lbs)
- 2 cloves fresh garlic, minced
- 1/4 cup low-sodium soy sauce
- 1/3 cup creamy natural peanut butter
- 1/2 cup full-fat coconut milk
- Salt and pepper to taste
- 1 tablespoon vegetable oil
Instructions
- Begin by cutting the chicken breasts into bite-sized pieces. Season the pieces with salt and pepper.
- In a large skillet over medium-high heat, add the vegetable oil. Once it’s hot, toss in the chicken pieces. Cook the chicken until it’s nicely browned and cooked through, usually about 5-7 minutes. After that, remove the chicken from the skillet and set it aside.
- In the same skillet, reduce the heat to medium. Add the minced garlic and sauté for about one minute until the aroma fills your kitchen.
- Next, stir in the soy sauce, creamy peanut butter, and full-fat coconut milk. Mix everything together well until the sauce is smooth and creamy.
- Return the cooked chicken to the skillet, stirring until each piece is thoroughly coated in the sauce. Let it simmer for a few minutes until heated through.
- Serve your Thai Peanut Chicken warm, garnished with chopped peanuts or fresh cilantro if desired.
Notes
Pairs well with steamed jasmine rice and vegetables. Adjust coconut milk for desired sauce thickness.
