Ingredients

  • 2 chicken breasts
  • 1 cup orzo pasta
  • 1 cup spinach
  • 1/2 cup sun-dried tomatoes
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 1/2 cup grated parmesan cheese
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning

Instructions

  1. Heat the olive oil in a large skillet over medium heat. While the oil warms, season both sides of the chicken breasts with salt, pepper, garlic powder, and Italian seasoning.
  2. Cook the seasoned chicken for 6-7 minutes on each side until it turns golden brown and is cooked through. Once done, remove the chicken from the skillet and set it aside on a plate.
  3. Add the chicken broth to the same skillet and bring it to a gentle simmer. Stir in the orzo pasta and cook it for about 10-12 minutes or until it reaches al dente, stirring occasionally to prevent sticking.
  4. Next, add the fresh spinach and sun-dried tomatoes to the skillet. After a minute, pour in the heavy cream and stir in the grated parmesan cheese until the sauce becomes creamy.
  5. Return the cooked chicken to the skillet, nestling it amongst the orzo. Let it simmer for another 2-3 minutes to heat the chicken through and blend all the flavors.
  6. Serve this comforting dish warm, garnished with extra parmesan if desired.

Notes

For a lighter option, substitute half of the heavy cream with chicken broth. Fresh herbs can enhance the flavor just before serving.
