- 2 chicken breasts
- 1 cup orzo pasta
- 1 cup spinach
- 1/2 cup sun-dried tomatoes
- 1 cup chicken broth
- 1/2 cup heavy cream
- 1/2 cup grated parmesan cheese
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
Instructions
- Heat the olive oil in a large skillet over medium heat. While the oil warms, season both sides of the chicken breasts with salt, pepper, garlic powder, and Italian seasoning.
- Cook the seasoned chicken for 6-7 minutes on each side until it turns golden brown and is cooked through. Once done, remove the chicken from the skillet and set it aside on a plate.
- Add the chicken broth to the same skillet and bring it to a gentle simmer. Stir in the orzo pasta and cook it for about 10-12 minutes or until it reaches al dente, stirring occasionally to prevent sticking.
- Next, add the fresh spinach and sun-dried tomatoes to the skillet. After a minute, pour in the heavy cream and stir in the grated parmesan cheese until the sauce becomes creamy.
- Return the cooked chicken to the skillet, nestling it amongst the orzo. Let it simmer for another 2-3 minutes to heat the chicken through and blend all the flavors.
- Serve this comforting dish warm, garnished with extra parmesan if desired.
Notes
For a lighter option, substitute half of the heavy cream with chicken broth. Fresh herbs can enhance the flavor just before serving.
