Aromatic and flavorful Vietnamese Lemongrass Chicken, perfect for weeknight dinners or gatherings.

- 1.5 lbs boneless, skinless chicken thighs, cut into bite-sized pieces
- 3 stalks fresh lemongrass, trimmed and finely minced
- 3 cloves garlic, minced
- 2 tbsp fish sauce
- 2 tbsp oyster sauce
- 1 tbsp light soy sauce
- 1 tbsp brown sugar
- 1 tsp ground black pepper
- 2 tbsp vegetable oil
- to taste sliced red chili
- to taste fresh cilantro
- 1 lime wedges, for serving
Instructions
- Start by trimming the lemongrass and mincing it finely.
- Heat the vegetable oil in a large skillet or wok over medium-high heat.
- Add minced lemongrass and garlic; sauté for about 1-2 minutes.
- Include chicken pieces and cook until golden brown, about 5-7 minutes.
- Mix fish sauce, oyster sauce, soy sauce, brown sugar, and black pepper in a bowl.
- Pour the sauce over the chicken and toss to coat.
- Cook for an additional 2 minutes with sliced red chili, if desired.
- Remove from heat and garnish with fresh cilantro.
- Serve with lime wedges on the side.
Notes
Adjust the seasoning to taste. Serve with jasmine or sticky rice for a complete meal.
