Ingredients

- 1 cup long grain rice
- 1 can chickpeas, drained and rinsed
- 2 cups vegetable broth
- 1/2 cup fresh herbs (parsley, cilantro, or mint)
- 1 lemon (juiced and zested)
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the rice and toast it for 2-3 minutes until slightly golden.
- Pour in the vegetable broth, chickpeas, lemon juice, and lemon zest. Stir well.
- Bring the mixture to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes.
- Remove from heat, stir in fresh herbs, and season with salt and pepper to taste.
- Serve warm as a meal or side dish!
Notes
Don’t skip toasting the rice for enhanced flavor. Fresh herbs are recommended for the best taste.
