Description

Crispy and delicious zucchini fritters, perfect as an appetizer, side dish, or light main course.


Ingredients

  • 2 medium zucchini, grated
  • 1/2 cup Parmesan cheese, grated
  • 1/2 cup Mozzarella cheese, shredded
  • 1/4 cup all-purpose flour
  • 1 large egg
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Olive oil for frying

Instructions

  1. Start by grating the zucchini. After grating, place the zucchini in a clean kitchen towel or cheesecloth and squeeze out the excess moisture.
  2. In a mixing bowl, combine the grated zucchini, Parmesan cheese, mozzarella cheese, flour, egg, minced garlic, salt, and pepper. Mix everything well until you have a uniform batter.
  3. Heat a generous amount of olive oil in a frying pan over medium heat.
  4. Scoop portions of the mixture into the pan, flattening each scoop slightly with a spatula.
  5. Fry for about 3-4 minutes on each side or until they turn golden brown and crispy.
  6. Once cooked, transfer the fritters to a plate lined with paper towels to drain excess oil.

Notes

Serve with sour cream, Greek yogurt, or dipping sauces like ranch or marinara for added flavor.
