- 2 medium zucchini, grated
- 1/2 cup Parmesan cheese, grated
- 1/2 cup Mozzarella cheese, shredded
- 1/4 cup all-purpose flour
- 1 large egg
- 2 cloves garlic, minced
- Salt and pepper to taste
- Olive oil for frying
Instructions
- Start by grating the zucchini. After grating, place the zucchini in a clean kitchen towel or cheesecloth and squeeze out the excess moisture.
- In a mixing bowl, combine the grated zucchini, Parmesan cheese, mozzarella cheese, flour, egg, minced garlic, salt, and pepper. Mix everything well until you have a uniform batter.
- Heat a generous amount of olive oil in a frying pan over medium heat.
- Scoop portions of the mixture into the pan, flattening each scoop slightly with a spatula.
- Fry for about 3-4 minutes on each side or until they turn golden brown and crispy.
- Once cooked, transfer the fritters to a plate lined with paper towels to drain excess oil.
Notes
Serve with sour cream, Greek yogurt, or dipping sauces like ranch or marinara for added flavor.
