- 12 lasagna noodles
- 2 cups ricotta cheese
- 3 cups spinach, chopped
- 1 zucchini, diced
- 1 bell pepper, diced
- 1 onion, chopped
- 2 cups marinara sauce
- 2 cups mozzarella cheese, shredded
- 1/2 cup grated Parmesan cheese
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- Cook the lasagna noodles according to package instructions; drain and set aside.
- Heat olive oil in a skillet over medium heat. Add onions, zucchini, and bell pepper; sauté until tender.
- Add spinach, garlic powder, salt, and pepper. Cook until spinach wilts.
- Spread a layer of marinara sauce at the bottom of a baking dish.
- Layer 4 noodles, half of the ricotta mixture, half of the vegetable mixture, and a third of the mozzarella.
- Repeat layers, finishing with noodles, marinara, and remaining mozzarella and Parmesan.
- Bake for 30 minutes until bubbly and golden.
- Let it cool for 10 minutes before serving.
Notes
For added flavor, include your favorite Italian herbs such as basil or oregano.
